Curried Cauliflower Soup | Recipe

2 tablespoons olive oil

2 small onions (or 1 large), peeled and chopped

2 small apples, peeled and chopped
1 tablespoon curry powder
1/4 teaspoon garam masala
1 head cauliflower, chopped
4 cups vegetable or chicken
Fish sauce, to taste
Lime, to taste

In a stock pot over medium high heat, add the olive oil and onion. Cook for one or two minutes then add the apple. When the onion is translucent, after about 5 minutes, add the spices and let toast. Add the cauliflower and stir to combine. Pour in the stock and bring to a boil then reduce to a simmer. Cook until the cauliflower is tender, about 20 minutes. Season with fish sauce and lime. Blend with hand blender. Garnish with chives or green parts scallion.
